Apricot Glazed Pork Chops




It’s been an emotional few days around Daily Organized Chaos…..my oldest son’s High School was set on fire and burned down to almost nothing (all that is left is brand new gym and superlab)on Sunday night.It’s a tremendous loss for our small town of 4,000.


Over 350 students are at home right now instead of learning…..we are all waiting for a decision from our school board when and where our children can attend regular classes again.


I believe in staying positive and in counting your blessings so here it goes…..no one was hurt…..no lives were lost….community came together as one ….we will get brand new school(eventually)…..we will make new memories while remembering the long history of SOSS (South Okanagan Secondary School).


…..with that said…..lets get cooking…..

Apricot Glazed Pork Chops




Today I am sharing with you a fantastic pork chop recipe that gets very high marks every time it shows up on our dinner table…..APRICOT GLAZED PORK CHOPS.


These Apricot Glazed Pork Chops are not only delicious, but very quick to make and guaranteed to be on your dinner table under 30 minutes.


Ingredients:

  • 4-6 Thin Cut Pork Chops
  • 1 Tbsp Butter
  • 1 Tbsp Olive Oil
  • 14oz Beef or Vegetable Broth
  • 1/4 cup Apricot Jam
  • 1 Tbsp Dijon Mustard
  • 1-2 Tsp Cornstarch
  • 2-3 Tbsp Water
  • Salt & Pepper



STEP 1: Wash and pat dry pork chops. Season to taste with salt and pepper.

STEP 2: In a large skillet heat butter and olive oil until hot enough for frying pork chops. Place pork chops into the skillet.

STEP 3: Fry pork chops until brown about 4 minutes. Turn and fry another 2-3 minutes or until the center is no longer pink.

STEP 4: Transfer pork chops onto a plate and keep warm.

STEP 5: Add broth, Dijon mustard and apricot jam to the skillet. Whisk until well blended.Stirring frequently bring to boil on high heat until sauce is reduced to about 3/4 cup.

STEP 6: While stirring the sauce also in a small dish mix together corn starch and water until smooth.

STEP 7: After sauce is reduced add cornstarch mixture to the skillet and stir for few seconds until the sauce thickens little more.

STEP 8: Spoon apricot glaze over pork chops and serve.


I usually serve my pork chops with rutabaga & potato mash and glazed carrots.

  1. That is so sad, just devistating. I know that will be something your son will never forget and the whole town for that matter. Did they find who did it? I hope new plans are made for the students soon.
