Banana Oatmeal Muffins



We are into first week of May and I am still not impressed with the weather we are having….Last night I had to turn on the fireplace in the living room….that is wrong on so many levels if you ask me.


I have a feeling that Mother Nature is feeling the recession pinch as well and is being very cautious with spreading the sunshine……just like the Easter Bunny being cheap with chocolate this year….my stash is EMPTY…..already.

Anyway, not having a chocolate in the house is probably a good idea….fruit is good too….especially BANANAS in a yummy Banana Bread with lots of Chocolate Chips…..just kidding.


Today is about healthy way using your old bananas and turning them into moist and delicious Banana Oatmeal Muffins.


As you might know many muffins are loaded with fat and sugar. As much as I love THOSE muffins I prefer healthier version that lacks on calories, but not taste.


Anybody can make healthy muffins with just a few simple changes to the traditional recipes.


I started with my regular Banana Muffin recipe and after few little changes the house was smelling like a success.


My kids went apes over these healthy Banana Oatmeal Muffins and I hope you’re family will enjoy them as well.


This recipe makes 16 regular HEALTHY Banana MUFFINS.


Ingredients:

  • 1 cup White Flour
  • 1/2 cup Whole Wheat Flour
  • 1 cup Oats
  • 1/2 cup Sugar
  • 21/2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 Eggs
  • 1/4 cup Unsweetened Apple Sauce
  • 1/4 cup Buttermilk
  • 1 cup Mashed Bananas (about 2)


STEP 1: Preheat the oven to 400F. Grease 16 muffin cups.

STEP 2: In a large bowl combine flour, whole wheat flour, oats, baking powder, baking soda, sugar and salt. Mix well.

STEP 3: Make a well in the middle.

STEP 4: In another bowl beat eggs. Mix in unsweetened apple sauce buttermilk and mashed bananas. Stir it together and pour it into the well.

STEP 5: Mix enough just to combine. Don’t over mix it.

STEP 6: Fill the muffin cups with the banana oatmeal muffin batter to 3/4 full.

STEP 7: Bake the banana muffins for 20 to 25 minutes.

    Did you know you can freeze left-over bananas. When they get too ugly to eat, they peel nicely into a baggie and freeze until you can use them later in the week, month, year. (Some of us just never get around to it….) lol

  9. I *love* banana muffins! Well, actually I really love banana bread, but it would go bad so fast, but muffins are so much easier to eat and if you make a lot, you can always give some away :)
