Cauliflower Schnitzels

Let me tell you….it’s been rough few days and the Organized Chaos wasn’t that organized or calm (still working on it).
Many things happened most of them very stressful and unpleasant, but the show must go on so I decided to stop feeling sorry for myself….get up….put on my big girl panties and keep moving forward.
So here I am sharing….caring….and all those good things that come with being a blogger.
It’s not a secret that I LOVE SCHNITZELS….I heart them so much and if it was socially acceptable I would eat them every day….I would eat them in a rain….I would eat them with a cane….I would eat them here and there….I would eat them anywhere…..
…..BUT…..I really can’t eat that much meat.

Well, since crunch is what I am really after then why not make vegetarian or to be exact Cauliflower Schnitzels?
After a trial run and family seal of approval….ladies and gentlemen…..I bring you…..Cauliflower Schnitzels.
Ingredients:
- 1 Cauliflower
- 1 Small Onion
- 2 cups Shredded Cheddar
- 2 Beaten Eggs
- 0,5 cup Cream or Half & Half
- 1-1,5 cup Flour
- Spices (personal choice)
- Bread Crumbs
- Oil for frying
STEP 1: Take apart the cauliflower. Put it into a large pot with water and salt. Cook till tender.
STEP 2: Drain the water, let it cool down and then chop into small pieces.
STEP 3: In a bowl combine the cauliflower pieces, finely chopped onions, shredded cheese, eggs, cream and flour (the mixture needs to be thick enough to form into balls).
STEP 4: Form balls about 2-3” in diameter and roll them in bread crumbs.
STEP 5: In a deep frying pan heat up oil, flatten the balls into little schnitzels and fry on both sides till golden brown.
STEP 6: Serve it with mashed potatoes or buttered potatoes and tartar sauce.
