Cherry Coffee Cake – Čerešňová Bublanina

Today I am sharing with you very special cake recipe from my childhood….
Growing up I remember eating my grandma’s Cherry Coffee Cake (Čerešňová Bublanina in Slovak) at least one Sunday a month.
I used to love her Cherry cake and I was looking for grandma’s recipe to make it for my kids ever since my grandma Lotka passed away few years ago.
I could not find it anywhere …..till last year…..I found it in the oddest place at the exact right time – the cherry season. I had to make it right away.
Grandma’s Cherry Coffee Cake (Čerešňová Bublanina) is not your typical coffee cake. It is very moist and bursting with fresh cherries.There is still feeling of comfort and closeness I get every time I have a piece of this cake.
I decided to share this feeling and the recipe for my grandma’s cherry coffee cake with you in hopes that your family will enjoy it as much as mine does.
Ingredients:
- 6 Large Eggs
- 300g Icing Sugar
- 200ml Water
- 200ml Oil (any vegetable oil is fine)
- 250g All Purpose Flour
- 1Tbsp Baking Powder
- 2Cups Fresh Pitted Cherries

1. Preheat oven to 375 degrees.
2. Line 15”x10” pan with wax paper.
3. Beat 6 egg yolks with the icing sugar till nice and fluffy.
4. Stir water and oil into the mixture.
5. Slowly mix in the flour and baking powder.
6. Beat the egg whites till stiff and fold into the mixture.
7. Pour the mixture into the paper lined pan.
8. Coat the cherries with flour and spread them evenly over the top.
9. Bake for 30-40 minutes or until the top of the cake is nice and golden brown.
10. Let it cool for a few minutes then dust with icing sugar.
***TIP*** To make this coffee cake you can use different soft fruit like apricots, plums or peaches.
