Buttermilk Chocolate Cake With Hazelnuts

The other day I was looking through my old recipe book that I started as a teenager watching my grandma and my aunts.
I came across a recipe for Buttermilk Chocolate cake and suddenly the memories of eating it at my aunt’s house popped into my head. I remember how much I used to love it and suddenly I could taste it.
I happened to have a carton of Buttermilk in my fridge (what good European doesn’t?). I decided to make Hazelnut Chocolate Cake.
It is probably the easiest cake I ever made. It is soft, moist with hint of cocoa and taste of crunchy hazelnuts.
Ingredients:
- 3 cup Buttermilk
- 3 cups Flour
- 1 1/2 cup Sugar
- 1/3 cup Oil
- 2 Tbsp Cocoa
- 2 tsp Baking Soda
- 3/4 cup Hazelnuts (chopped)
STEP 1: Preheat the oven to 350F. Grease 15 x10″ pan.
STEP 2: In a large bowl mix together the buttermilk, flour, sugar, oil, cocoa and baking soda. Make sure everything is well combined. Fold in the hazelnuts and pour the cake mixture into the pan.
STEP 3: Bake for 35-40 minutes or until toothpicks comes out clean.

STEP 4: Cool in the pan.
You can make it more decadent by topping it with a chocolate Ganache and sprinkling it with chopped hazelnuts.
