Pepper Steak with Orzo

The weather outside might not be showing any signs of summer…..YET, but I have a bad feeling that once it turns we will be going from cold and rainy to scorching hot….yes, that’s my premonition.
I am not a big fan of cooking during hot summer months and if it was up to me we would eat only ice cream, salads and fresh fruit. Unfortunately my children are typical male meat eaters and not matter what the temperature they love their meat.
I have a few meat recipes that I make during summer….recipes that keep the additional heat to a minimum.
This week as a preparation for the summer (maybe it will come if I wish it)I would like to share with you my recipe for Pepper Steak with Orzo.
This is a great summer steak recipe. The Pepper Steak will be ready to be served in 30 minutes and the heat output from the stove is minimal.
Ingredients:
- 1 1/2lbs Beef Top Round (cut into stir-fry strips)
- 2 Tbsp Oil
- 1/2 cup Beef Stock
- 1/2 cup Red Wine
- 1 Onion (sliced)
- 1 Clove Garlic (minced)
- 1/4 tsp Ground Ginger
- 2 Bell Peppers (cut into strips)
- 1 cup Mushrooms (sliced – optional)
- 1 Tbsp Cornstarch
- 1 tsp Sugar
- 3 Tbsp Light Soy Sauce
- 1-2 Tomatoes (cut into wedges)

STEP 1: In a large skillet heat the oil on medium-high heat. Cook beef strips for 5 minutes while stirring.

STEP 2: Stir in beef stock, red wine, sliced onion, minced garlic. Heat till it’s boiling then reduce heat to low. Cover the skillet and let it simmer for 15 minutes.
Last 5 minutes of simmering add bell peppers and mushrooms.

STEP 3: In a small bowl mix together corn starch, sugar and soy sauce. Stir it into beef mixture cook until it thickens while stirring constantly.Let it boil for about 1 minute.
STEP 4: Place tomatoes over beef, cover and let it cook for few more minutes until the tomatoes are heated through.

Serve Pepper Steak on a bed of Orzo pasta and ENJOY!
