Savory Carrot Cheddar Muffins

Few months ago I made a decision to be one of the contributors/bakers for Breakfast Club at my son’s school.
The goal of the Breakfast Club is to make sure that no child goes without a proper and nutritional breakfast.
Every morning before school children who didn’t have healthy breakfast at home for whatever reason can come and grab some healthy muffins….piece of toast….smoothie…..piece of fruit……glass of milk.
Sometimes the principal of the school come early and surprises the kids with waffles & sausages or breakfast burritos.
I fell in love with the idea of Breakfast Club and I wanted to be at least a little part of it.
Part of my contribution to the Breakfast Club is supplying them twice a month with my homemade healthy muffins and breads.
This week I decided to put a twist on regular muffins and I decided to bake some savory muffins instead.
I baked Savory Carrot Cheddar Muffins.
These muffins are not only healthy, but they are moist and delicious as well. The sweetness of carrots and sharpness from Cheddar made these Carrot muffins a hit with all the children at the Breakfast Club.
This recipe will make 16 regular size muffins.
Ingredients:
- 1 cup Carrots (finely shredded)
- 1/2 Butter (melted)
- 2 Eggs (beaten)
- 1/2 cup Cheddar (grated)
- 2 cups Flour
- 1 cup Whole Wheat Flour
- 3 tsp Baking Powder
- 1/2 tsp Salt
- 1 Tbsp Sugar
- 1 cup Milk
STEP 1: Preheat the oven to 400F. Grease muffin pan or use baking cups for muffins.
STEP 2: In a large bowl mix together shredded carrots, melted butter (not too hot), eggs and shredded Cheddar cheese.
STEP 3: In another bowl combine well together flour, whole wheat flour, baking powder, salt and sugar. When mixed well add it to the carrot mixture.
STEP 4: Gradually add milk while stirring. Do not over-mix or the muffins will end up dense. Batter for these healthy muffins will be lumpy.
STEP 5: Fill up the muffin pan about 2/3 with the batter.
STEP 6: Bake the muffins for about 20 minutes.
I hope you will enjoy this recipe and the Savory Carrot Cheddar muffins as much as the children at the Breakfast Club did.

Oooo, this looks really tasty! I’m the only one in our family of 5 that loves or even likes (lol) any type of carrot cake/bakery. So I’m DEFINITELY going to make these! lol
