Today is a very special day so before I share my delicious recipe with you I want to take the opportunity and remind everyone that today as every last Wednesday in February here in British Columbia is Anti-Bullying Day also known as PINK SHIRT DAY.
Pink Shirt Day started by two students as a protest against a bullying incident at Nova Scotia high school. On this day participants are asked to wear pink to symbolize a stand against bullying.
In 2008 Pink Shirt Day was proclaimed as provincial Anti-Bullying Day by premier of British Columbia.
So today my children and I are proudly wearing our Pink Shirts to show our support and take a stand against bullying.
Now let start cooking….today on the menu…..Beer Chili….
March might be around the corner, but it is still cold…windy…bone chilling weather outside. What better way to heat up the body furnace then with bowl of homemade Slow Cooker Beer Chili served in fresh artisan Sourdough Bread Bowl.
- 2 lbs Ground Beef
- 1-1 1/2 lbs Stewing Beef
- 1 Onion
- 1 cup Beer
- 1 cup Celery (chopped)
- 1 Jalapeno Pepper (chopped)
- 19 oz can White Kidney Beans
- 19 oz can Red Kidney Beans
- 2 – 19 oz cans Diced Tomatoes
- 2 tsp Chili Powder
- Salt Pepper
STEP 1: In a large skillet brown ground beef. Drain the fat. Add onions and chili powder. Cook for minute or two. Pour the ground beef mixture into slow cooker.
STEP 2: Use the same skillet to heat little bit of oil and to brown stewing beef. De-glaze with about 1/4 cup of beer.Pour into slow cooker.
STEP 3: Drain red and white beans. Pour beans, diced tomatoes, celery and jalapeno pepper into slow cooker.Pour in rest of the beer and about 1/2 cup of water or beef stock.Mix it all together. Salt and pepper.
STEP 4: Cook on slow for 6 hours. Serve Slow Cooker Beer Chili with shredded cheddar cheese and dollop of sour cream.
If you have fresh bread bowls just hollow the inside and fill it with Beer Chili.
