Vanilla Cupcakes With Marshmallow Frosting

I won’t lie to you….last two weeks were rough….mentally….emotionally and to tell the truth….physically as well.
Ever since the accident (my 9 year old boy getting hit by an SUV going 80km/hr being driven by driver who failed to stop for a school bus in full stop with flashing lights and stop sign pulled out) I was not able to concentrate on anything….hence the luck of writing….
….the only thing after bringing Sam home from the hospital that kept me sane and somewhat calm was….BAKING….
While in hospital Sam received tons of get well cards and little presents from the children, teachers and staff of his wonderful school…..I was so touched and impressed….to see the smile on Sam’s face when his beloved teacher entered his hospital room…..and the grin when he was reading every single card was PRICELESS.
Then and there I decided I needed to do something….to show our appreciation….to show how much their unselfish and caring gestures touched us.

Unfortunately, Sam was not being able to attend school on Valentine’s Day….I know it made him sad….there was no way I was allowing my child to be sad on Valentine’s Day especially after the horrible accident.
I decided to make special Valentine’s Day Cupcakes…..drive Sam to his school in the afternoon and surprise all the children.
….with the help of his teacher we managed to give all the children and staff a wonderful Valentine’s Day surprise…
….the best part…..as pretty and tasty as the cupcakes were…..the best surprise for all of them was seeing Sam….alive and walking…..
I don’t think there was a child or a person who didn’t give my little boy huge hug…..there were tears of joy….hugs….happy screams….caring looks….
It was a day that won’t be forgotten…..
To show my love and appreciation I decided to make three kinds of cupcakes and they were all hit….especially CLASSIC VANILLA CUPCAKES with MARSHMALLOW FROSTING.

This recipe makes 24 regular size cupcakes.
Ingredients for Cupcakes:
- 2 1/2 cups Flour
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 1 cup Butter Unsalted (softened)
- 2 cups Sugar
- 3 Eggs
- 1 Tbsp Vanilla Extract
- 1 cup Buttermilk
STEP 1: Preheat oven to 350F. Grease and line 24 muffin cups.
STEP 2: In a large bowl or stand up mixer beat together butter and sugar until creamy and fluffy.
STEP 3: Gradually add eggs and vanilla extract.
STEP 4: In another bowl whisk together flour, baking powder and salt.
STEP 5: On a low speed gradually beat in flour mixture alternating with milk. Start and finish with flour.
STEP 6: Divide cupcake batter into cupcake liners about 1/4 cup of batter per cupcake.
STEP 7: Bake 18-20 minutes or until golden brown.
STEP 8: Remove cupcakes from the oven and cool for 5 minutes before transferring onto cooling rack.
STEP 9: When all cupcakes are completely cool frost them with marshmallow frosting and decorate as you wish.
Ingredients for Marshmallow Frosting:
- 2 cups Butter Unsalted (softened)
- 3 cups Icing Sugar
- 1 jar Marshmallow Fluff
- 2 tsp Clear Vanilla Extract
STEP 1: Beat together butter and icing sugar until creamy and fluffy. Add marshmallow fluff and beat on medium until combined. Slowly beat in vanilla extract.
You can just spread the marshmallow icing on cool vanilla cupcakes by hand or you can use pastry bag with your choice of tip.
Play around with it and have fun…..that’s what cupcakes are suppose to be….fun to make and fun to eat!
TIP: To get the pink stripe design on your icing paint 3 or 4 vertical lines inside the pastry bag using painting brush and food coloring before filling it with icing.

Yes, there was no way we were skipping Valentine’s Day this year. Their dad couldn’t be home so I had to make it that much special.
