European Vegetable Stew (Lečo)

Summer and Lečo in Central Europe go together as Ice Cream and Apple Pie…..growing up in Slovakia I couldn’t imagine summer without having Lečo at least once a week.
What is Lečo, you ask?
Lecsó – pronounced “LETCH-oh”; Lecsó, Czech and Slovak Lečo, Letscho, Leczo) is an originally Hungarian thick vegetable stew made from peppers, tomatoes, onion, lard, salt and Hungarian paprika as a base recipe. …
I don’t think there is a family in Hungary, Slovakia or Czech Republic that doesn’t eat Lečo during summer months.
Lečo is a traditional and classic Central European dish and every family has their own version…..their own recipe.
Some people make it with egg….without eggs…with sausage….or vegetarian. Many people make basic Lečo recipe and can it for winter….the possibilities are endless.
I prefer my Lečo with eggs….little bit of cream….no meat. My family enjoys their Lečo with few European Wieners on top.
Ingredients:
- 2 Tbsp Oil
- 1 Onion (chopped)
- 1 Tbsp Hungarian Paprika (sweet or hot)
- 2-3 Fresh Green Bell or Yellow Hungarian Peppers (cleaned & sliced)
- 2 cups Cherry Tomatoes (sliced in half) or 2-3 Tomatoes (cubed)
- 4 Eggs
- 1/4 cup Whipped Cream or Cream
- Salt & Pepper
STEP 1: In a skillet heat the oil on medium. Add chopped and Hungarian Paprika onions. Saute for 2-3 minutes.
STEP 2: Add sliced fresh peppers and saute until the peppers are soft.
STEP 3: Meanwhile lightly whip together eggs and cream. Add pinch of salt and black pepper.
STEP 4: When the peppers are soft add chopped up tomatoes and saute for another 2 minutes. Stir couple times.
STEP 5: Add whipped egg and cream mixture into the vegetable mix. Stir gently few times until eggs are cooked and ready to serve.
Traditionally Lečo is served with fresh bread or rolls…..sometimes cooked potatoes.

I love lečo, mum makes is quite often during summer and just like you say I can’t imagine summer without it, too. Yours looks so yummy!
I miss summer in Europe so much. I am planning to take my boys next summer and then we can make some lečo Slovak style.
