Waldorf Chicken Salad



Today is Day 3 of our 2 week Spring Break (yes, we get 2 weeks and don’t get me started on that). My Little Peanut left 5 days ago for a little trip with his daddy and I am here all alone with my teenage 14 year old Hormone Boy (might as well be alone).

I miss my baby and my hubs, but it gives me more time to catch up on all of my work (so why am I still behind?).


Since there is only two of us and the teenage human garbage can (and I mean it in the most loving way) will eat anything I throw at him yesterday I decided to make my version of Waldorf Salad or as I call it my Waldorf Style Chicken Salad.


Waldorf salad is one of the traditional salads that dates back to 1893 when maître d’hôtel of famous Waldorf Hotel in New York City Oscar Tschirky came up with this delicious dish.


Traditional Waldorf Salad was a basic salad of cut up apples, celery and mayo served on a bed of lettuce. Later in 1928 Waldorf salad was made even better with adding crunchy walnuts.


These days you don’t see many restaurants serving classic Waldorf Salad. It is disappearing slowly from restaurants and out kitchens. What a shame.

My version of Waldorf salad can be served as a light meal, an appetizer or just a little snack.

For Waldorf Style Chicken Salad you will need:

  • 1 Large Skinless Boneless Chicken Breast (store bought Rotisserie will work fine)
  • 1 cup Juicy & Firm Apples (I like Spartans or Ambrosia)
  • 1 cup Green Seedless Grapes
  • 1/2 cup Celery (optional)
  • 1/4 cup Walnuts (chopped)
  • 1/4 cup Light Mayo
  • 1/4 cup Plain Balkan Style Yogurt
  • 1 tsp Lemon Juice
  • Salt & Pepper to taste if needed



Grilled the chicken breast till done, but it’s nice and juicy. Let it cool down and then chopped into smaller cubes.


Wash and dry all your fruit and vegetables.


In a bowl combine chopped apples (skin is optional), chopped celery, cut up grapes (in halves), chopped walnuts, mayo, yogurt and lemon juice. Mix it well. Add the chicken and toss it gently around till everything is lightly cover with the mayo and yogurt mixture.

Taste it and add salt and pepper if you need it.Some people do. I personally don’t use any.


Serve it on a bed of lettuce.
