White Chocolate Cranberry Cookies

…..Fresh…..hot out of the oven cookies…glass of milk…..right after school….one of the best childhood memories……
Can’t get any simpler then that.
I make fresh homemade cookies for my boys every week. They each have few favorites, but there is once cookie they both can agree on…..WHITE CHOCOLATE CRANBERRY COOKIE.
Since my oldest son is Type 1 diabetic sometimes I make two batches and I substitute sugar with Splenda in one batch. They still taste delicious and he can take them to school for a snack as well.
Sometimes I also change the white chocolate chips for semi-sweet and butterscotch chocolate chips and cranberries for raisins.
This easy White Chocolate Cranberry Cookie recipe makes about 6 dozen delicious cookies.
Ingredients:
- 1 cup Butter (unsalted, room temperature)
- 1/2 cup Brown Sugar
- 1 cup Sugar
- 2 tsp Vanilla Extract
- 2 tsp Baking Soda
- 1 tsp Salt
- 2 Eggs (beaten)
- 2,5 cups Flour
- 1,5 cups White Chocolate Chips
- 2 cups Cranberries
STEP 1:
Preheat oven to 350F. Grease cookie sheet.
STEP 2: In a large bowl cream together butter, sugar, brown sugar. Add vanilla extract, baking soda and salt. Mix thoroughly.
STEP 3: While mixing gradually add the beaten eggs and the flour. Incorporate it all together. Then add the chocolate chips and cranberries. Mix well.
STEP 4: Drop by teaspoons onto the cookie sheet. Bake about 12 minutes or until nice and brown.

Glad I could help, Jenn. If you have too many dried cranberries just add little more into the cookie recipe. They will be that much yummier.
